Easter Basket Cake Recipe

Good afternoon! Hope all is well in your neck of the woods.

Well, it's official - spring break has begun!!!  No school until April 16th!! And my hubby managed a 4 day weekend - awesome!!  Tomorrow is "Gotcha Day"!!  It's the day that we became a family and is a special day for us. So our son is having a friend spend the night, then Saturday we are going to ride go carts and have lunch at a pizza buffet (pizza is one of his favorites)!  He pretty much gets to choose what we do and that's what he picked this year!!

I wanted to do a post today about another Easter cake I found that I think is cute and would be easy to do. So if you're still on the fence as to which cake you want to make for your holiday - here is another to consider!

Go here for the recipe and a downloadable PDF of the diagram:

Cute Easter Bunny Cake

Good morning!

Are any of you finding it hard to believe that it is March already?  Doesn't it seem like it was Christmas just yesterday?  Wow - the older I get the faster time seems to fly by!

With that said, Easter is just around the corner.  I had previously showed you a bunny cake that I made in the past for Easter.  The one below is one that I would like to try but I'm not sure the coconut would go over well with my family.  I suppose I could just use icing with a tip to give it definition.....

Anyway, here's the scoop so you can make one, too!

I have another bunny cake to show you as well.  I think it is really cute!

OMG - Chocolate Gooey Butter Cookies

Happy Friday!!

Yesterday my good friend, her daughters, my little guy and I baked cookies.  Well, let me correct that - the kids baked cookies - we adults just supervised!  It really was so much fun - flour and powdered sugar everywhere but hey - it's only Christmas once a year!!!!

We make cut out sugar cookies, gingerbread drop cookies dipped in white chocolate and chocolate gooey butter cookies.  They all came out great but I just had to pass along the recipe for the chocolate gooey butter cookies because they are sinful!!  Santa definitely will enjoy these at your house and they are sooooo easy to make.

Here's the link on Paula Deen's website: Chocolate Gooey Butter Cookies

Thank you Paula Deen for sharing this one - it's a keeper!!!  We have to make another batch since the first batch didn't last very long!

Have a great Friday!  See ya soon!

Danish Aebleskivers

Good morning!

If you are wondering what a Danish Aebleskiver is - then this post is for you! I have been wanting this pan for the longest time. It is also available at Williams Sonoma but in my opinion is a little pricey at $40. But now I've found my favorite site for everything that involves baking, The Prepared Pantry!!

This site has it all - recipes, tools, mixes, ingredients, supplies, gifts - positively amazing!!!! Anything and everything you could possibly want or need to make some awesome things. I so wish I had found this site before Mother's Day, but I have a birthday coming in September - LOL!!!!  (Maybe my hubby will get it for me early.)

There are so many variations with these little pancake puffs - the sky is virtually the limit.  Breakfast, snack, or dessert - the choice is yours to make!  The link below for the pan and mix combo also has a YouTube video showing how to make these delectable little treats - chocolate with chocolate filling!!! So Yummy. After watching you may just order your pan today!

Recipe for Danish Aebleskivers as shown at preparedpantry.com:

A holiday in Denmark often begins with a breakfast of puffy little pastries called aebleskiver (ebleskiver). Traditionally, they are made with an apple filling or served with applesauce (hence their name). Like other great pastries, wonderful variations have evolved. You’ll love aebleskiver with jam fillings and cream cheese fillings.

Ingredients

2 cups all-purpose or cake flour
1 teaspoon salt
1 teaspoon baking soda
3 large eggs
2 cups buttermilk
filling of your choice
powdered sugar

Directions

Aebleskiver1. Mix together the flour, salt, and baking soda.
2. Separate the eggs, the yolks from the whites. Set the yolks aside. Beat the egg whites until light and fluffy and soft peaks form.
3. Add the egg yolks and the buttermilk to the flour mixture and stir until combined. Gently fold the egg whites into the batter.
4. Grease your aebleskiver pan with a spray dispenser or with butter (spray your pan again as needed). Heat the pan over medium heat. When hot, fill each cup one-third full with batter. Add a small amount of filling to each. Cover with an additional one-third batter. (Try using the Medium Quick Release Scoop to cleanly drop the batter into the cups.)
5. Cook for one to one and one-half minutes before turning. (You can turn your aebleskiver with a toothpick or skewer.) Cook for another minute or until done. Remove to a plate and sprinkle with powdered sugar. Serve warm.

The recipe above is from scratch but The Prepared Pantry has many mixes to choose from.  If you want to make your own Aebleskiver then you must check out this deal!!!

Danish Aebleskiver Pan and a free mix can be yours for the amazing price of $26.99 - and it's cast iron to boot!  Sign me up!

Happy baking!!  Have a great day.  See ya soon.

Puppy Kisses and Cheesecake - What a Combo!!!

 Good Monday to you!

As promised, here are a few pictures of our new babies - Daisy and Violet!  Aren't they cute? They are sisters and I rescued them from a local shelter.  The shelter is a high kill facility and I just couldn't bear the thoughts of these little ones being put to sleep - could you?  So they are our newest family members and they keep us hoppin'!

Sleeping (sorta) With Cristian
Both are very sweet puppies.  They have pretty big feet so they will be larger dogs.  That's ok though.  I wouldn't have cared how small or how big they would be - just as long as they weren't put down.

Now, a few posts ago I showed you the Red Velvet Cheesecake Cake that is supposed to be a close second to the Cheesecake Factory.  Well, I finally made it and according to my friend Michele, it tastes exactly like the one from Cheesecake Factory!!!  Check it out!

This Icing is to Die For!

The Cheesecake Layer is Scrumptious!

I have to say that I was surprised how easy it was to make.  It really did come out great.  I'd venture to say that it's my favorite thing I've ever made baking wise!  What a compliment from my friend, too!!  I have a feeling I'll be making many more of these in the future - LOL!!!  So if you missed the original post, scroll down a few and get the recipe for yourself - you won't be sorry!!!

Have a fantastic Monday!  See ya later!

Single Serving Pie in a Jar!!

Good Saturday to everyone!  I know I've been MIA the last few days but between blogger being unavailable and the addition of not 1 but 2 retriever mix puppies to our family - it's no wonder!

I came across this site the other day and I just think these are ingenious!  They would make cute gifts for many occasions - teacher appreciation, at Christmas time for your hair stylist, your letter carrier, or your friends.  They would be cute hostess gifts, too.  They are even great little desserts at the end of a special meal!

Wanna know how to make them?  Here's the site: Our Best Bites

This site is terrific and I'm sure you'll find so many other things that strike your fancy!  So go check it out and enjoy the rest of your Saturday.  See ya soon!

The Cheesecake Factory's Red Velvet Cheesecake? Almost!

Good morning!  The Cheesecake Factory's Red Velvet Cheesecake, anyone?  How about a close second made in your very own kitchen?  Let me explain...

My friend, Michele, is a fan of the Cheesecake Factory.  I personally have never eaten there, but I did have a piece of their cheesecake recently.  (I must tell you, it was absolutely to die for!!!)  So anyway, back to the matter at hand...frequently, Michele has cravings for this particular Cheesecake Factory dessert - the only problem being is the closest restaurant to us is about 1 1/2 hours away!!!

Long story short, this past weekend she had the craving again. Only this time she was bound and determined to find a recipe that is similar to the one that the Cheesecake Factory makes.  Hence, today's post.  She discovered this recipe and passed on the site to me (of course, I want to make this now!) and I'm in turn passing it on to you good people!  So to get the recipe you need to go here (it's even printable from the site):  Lincoln’s Red Velvet (Cheesecake) Cake

Looks Yummy, Doesn't It?

This recipe looks to be pretty easy and I most definitely have to thank Erins Food Files for finally satisfying Michele's craving!  (I have a feeling that we'll be having this dessert in the not too distant future!)  I spent some time on the site and found several recipes that interested me.  So if you have time, go on over and check it out!

Hope this helps to satisfy your sweet tooth!  Have a terrific Tuesday and I'll see you tomorrow!

Bunny Cake

It's almost Friday!  Hurray!!

About 4 years ago, I made this cake for Easter.  It was in the Food and Family Magazine by Kraft Foods.  The recipe calls for coconut but my family doesn't really like it so I didn't use it.

Here's the cutting diagram to use to get the shapes:

It was very easy to make and decorate.  If you want the recipe you can find it here:  Bunny Cake at Kraft Recipes.

I hope this inspired you to make an easy and delicious Easter Cake!  Have a wonderful Thursday and we'll chat soon.

DIY Cake Stand

Happy St. Patrick's Day!  Are you wearing your green today?

I've recently made several layered cakes and I unfortunately don't have a cake stand to put them on.  So I thought to myself, maybe I can find a tutorial for making my own.  As luck would have it, I came across this blog - goldiloks - which has simple DIY instructions on making very pretty cake stands.

Isn't it cute?  And very easy to make.  So if you're interested in making your own - head on over to her blog to get the step by step instructions!

The recipe couldn't be easier.  2 ingredients and voila you have muffins - LOL!!!  Well, I don't know about you, but these are definitely on my to do list. Don't they look amazingly yummy?

Turkey Cupcakes, Anyone?

This picture just makes me smile.  Nursery School was so much fun - possibly just as much fun for me as it was for Cristian!  Again, I'm thinking the idea came from Family Fun Magazine.

As I mentioned before, it's a good magazine if you have kids.  I started getting it when Cristian was a toddler and he's now 8 years old and I still get it.  It has recipes, crafts, good information for places to take a family vacation and a whole lot more.

These cupcakes were pretty easy to make if my memory serves me correctly.  The heads are Nutter Butter Cookies, and the tail feathers are Fruit Roll Ups, and the face was an after thought.  I think the original called for decorator gel or icing to finish the face, but I liked the M&M's for the eyes.

I really miss those days of homemade snacks.  Our school district doesn't allow anything homemade - everything has to be store bought.  Such a shame.  My generation grew up with homemade party food at school and we turned out OK.  Hey, I understand it's a different world we live in today but.....OK, don't even get me started on that topic!

Anyway, putting this post together got me motivated to bake so I'm off to make cookies with Cristian!  Chat with you soon.
